<p>There’s something wonderfully grounding about baking bread. It slows us down, fills the house with warmth, and makes a weekend feel just a little more special&#8230;easy, fluffy focaccia.</p>
<p>One of our founders, Nic’s, current obsession? The fluffiest, easiest homemade focaccia, golden and crispy on the outside, sumptuously soft on the inside, and topped with olive oil and flaky sea salt.</p>

<p>Thanks to the ever-reliable RecipeTin Eats recipe book, this is a no-fuss recipe that requires no kneading, no mixer, and almost no effort. All you need is a bowl, a baking tray, and a little patience while it rises.</p>

<h4>Easy Homemade Focaccia (by RecipeTin Eats)</h4>
<h5><strong>What You’ll Need:</strong></h5>
<ul>
<li>1¾ cups bread flour (or plain flour)</li>
<li>1 tsp instant yeast</li>
<li>4 tsp sugar</li>
<li>1¼ tsp salt</li>
<li>¾ cup warm water</li>
<li>1½ tbsp olive oil (plus more for baking)</li>
<li>½ cup mashed potato (roughly half a large potato, boiled and mashed smooth)</li>
<li>Flaky salt + your choice of toppings (think rosemary, olives, garlic, or cherry tomatoes), I love garlic &amp; rosemary!</li>
</ul>
<h5><strong>How To Make It:</strong></h5>
<ol>
<li><strong>Make the Dough</strong><br />In a large bowl, mix the flour, yeast, sugar, and salt. Add warm water, olive oil, and mashed potato. Stir with a spatula until you have a sticky dough.</li>
<li><strong>Let It Rise</strong><br />Cover and leave somewhere warm for 30–40 minutes until it puffs up.</li>
<li><strong>Fold + Rise Again</strong><br />Drizzle a clean bowl with olive oil. Pop the dough in the bowl, gently fold the dough a few times and let it rise again for 30 mins.</li>
<li><strong>Prepare Your Pan</strong><br />Grease a baking tray or round cake tin with olive oil. Spread the dough into the pan (don’t worry if it’s uneven) and let it rise one last time for about 40 minutes.</li>
<li><strong>Dimple + Top It</strong><br />Preheat your oven to 220°C. Drizzle the dough with olive oil and press your fingers into it to make little dimples. Add toppings like rosemary, garlic, olives or tomatoes, then sprinkle with flaky sea salt.</li>
<li><strong>Bake</strong><br />Bake for 25–30 minutes until golden, crisp on the edges, and fluffy in the middle.</li>
<li><strong>Cool &amp; Enjoy</strong><br />Let it rest for 10 mins (if you can wait). Tear, dip, and devour.</li>

<p><strong>It’s that time of year…again! Making (and breaking) goals with style.</strong></p>

<p>The gyms are packed, the planners are fresh, and everyone is convinced that this is the year they’ll become a whole new person.</p>
</p>
<p>But let’s be honest, for most of us, by February, our resolutions have slipped away faster than we can say, “I’ll start on Monday.”</p>
</p>
<p>Here’s a fun look at why resolutions are so hard to stick to and why sometimes that’s totally okay.</p>

<h5><strong>1. The optimism is real &#8211; but so is the reality</strong></h5>
</p>
<p>At the start of the year, our optimism is unstoppable.</p>

<p>We’re determined to crush every goal from eating only kale to becoming an expert meditator at home or at work. But once the shine of the new year fades, so does our enthusiasm.</p>
</p>
<p>Studies show that nearly 80% of people abandon their resolutions by February! So, if you find yourself drifting from your goals, know that you’re in good company.</p>

<p>Goals evolve, and so do we. If you set an ambitious resolution, feel free to adjust – it is after all, your resolution not anybody else’s.</p>
</p>
<p>Don’t want to make any New Year’s resolutions at all? That’s totally valid, too! The new year is just a calendar change, not a deadline. Consider another start date for any new goals.</p>
</p>
<p>So, whether you’re an “all-in” kind of person on your resolutions or embracing a “see what happens” approach, make 2025 a year that’s fun, flexible, and forgiving.</p>
</p>
